Visits to the Cheese Dairies

Álava is known for its traditional methods of producing foods associated with agriculture and livestock, and among these its cheese is a shining example. Our territory, along with Bizkaia, Gipuzkoa and Navarre, produces one of the best cheeses in the world, Idiazabal cheese, made with raw milk from latxa or carranzana sheep.

Some twenty farms throughout various regions of Álava make this quality cheese that features an exceptional flavour and which needs to be aged for at least two months. Most of the producers use milk from their own sheep and employ an environmental and growing-cycle friendly process.

Several of these cheese dairies are open to the public to show how the shepherds and shepherdesses craft this gastronomically excellent product. Visitors receive a brief introduction to cheese tasting and, of course, sample Idiazabal cheese to learn how to appreciate the nuances of its flavour.

These three cheese dairies offer visits on Saturdays, all year round, at 17:00, except in August, booked in advance at the Llanada Alavesa Tourist Office (945 302 931 – This email address is protected against spambots.
